Brownie Ice Cream Pie

ingredients:

pie crust
1 ¼ cup gluten-free biscotti crumbs
6 tablespoons unsalted butter, melted and warm

pie filling
1 pint of GF vanilla ice cream, slightly softened
3 or 4 Mariposa brownies

directions:
Preheat the oven to 400º, centering an oven rack in the middle of the oven.

for the crust ...
Add the biscotti crumbs and butter to a food processor. Pulse to combine until the mixture resembles wet sand.

Transfer the mixture to a 9-inch pie plate. Press the crumbs evenly on the bottom and up the sides forming the crust. Bake the crust until it is fragrant and beginning to brown, about 10-12 minutes. Transfer to a wire rack to cool.

for the filling ...
Blend brownies and softened ice cream until the mixture is smooth. Pour brownie and ice cream mixture into the baked (and cooled) crust. Cover and freeze.

Top with fresh berries when ready to serve. It’s that easy!

makes 1 9-inch pie, serves 6-8
