gluten-free biscotti crust recipe*
This simple recipe turns out a wonderful "crumb" crust that can be used for
cheese cakes and pies calling for a graham cracker crust.
ingredients:
1 ¼ cup Mariposa gluten-free biscotti crumbs
2 tablespoons sugar
6 tablespoons unsalted butter, melted and warm
preparation:
1. Preheat the oven to 325º, centering an oven rack in the middle.
2. Add the biscotti crumbs, sugar and butter to a food processor. Pulse to
combine until the mixture resembles wet sand.
3. Transfer the mixture to a 9-inch pie plate. Press the crumbs evenly on
the bottom and up the sides forming the crust. Bake the crust until it is
fragrant and beginning to brown, about 15-18 minutes. Transfer to a wire rack
to cool.
